Recipes and More

We had a birthday dinner last night and I thought I’d share with you some of the recipes that were super yummy!

Ham ‘n Cola

  • 1/2 c brown sugar
  • 1 t dry mustard
  • 1/4 c cola-flavored soda
  • 3 – 4 lb precooked ham
  1. Combine brown sugar, mustard, and horseradish. Moisten w/ just enough cola to make a smooth paste. Reserve remaining cola.
  2. Rub entire ham w/ mixture. Place ham in slow coker and add remaining cola.
  3. Cover. Cook on Low 6-10 hours, or High 2-3 hours.

Extra Good Mashed Potatoes

  • 5 lb potatoes, peeled, cooked and mashed
  • 8 oz package cream cheese, softened
  • 1.5 c sour cream
  • 3 t onion or  garlic, salt
  • 1.5 t salt
  • 1/4 – 1/2 t pepper
  • 1 T butter, melted
  1. Combine all ingredients. Pour into slow cooker
  2. Cover. Cook on low for 2 hours. (We were running some errands and didn’t get home in time to get this in the slow cooker, so we baked it at 350 degrees for 35 minutes).

Also, the Apples to Apples game? FUN. I’d highly recommend it. Add it all together and top it off with a bottle of this, and you are set for a fantastic evening!

Poor Prayse is sick. She’s had a cold since we got back from Puerto Rico and she just can’t shake it. The cold stepped up it’s game this weekend and it is knocking my baby down. She is still smiling and we play, but she gets frustrated and her poor little nose and throat… even with just a cold I hate it. When my soon-to-be 18 month old looks at me from the dinner table at 6:30 with tears in her eyes and says, “Nigh nigh?” You know something is wrong. The kid doesn’t stop for anything, much less ask to be put to bed.

Raymonn is getting more and more interest from people asking about websites. He is about to start working with Richie’s Cafe in Puerto Rico. We went there one night for a late dinner and ended up meeting and drinking mojitos with Richie. Now a couple of weeks later, and they are beginning to work together on a new website. I am so excited for him, he really is good. And he taught himself. He realized the year we got married that he was interested in webdesign, with the help of a few books he taught himself not only how to design but to actually code PHP. Seriously? That’s awesome, it’s learning another language and then having someone hire you to do just that. I am proud of him!

  2. Poor praysie! That makes me so sad to think that she’s asking for ‘Nigh nigh’… She’s such a dolly! I had so much fun with her this weekend… 3 days in a row! I am spoiled.

    As a side note… I had to laugh on our way home on sunday. Matt had a scab on his elbow that had ripped off and looked pretty raw and sore. When I asked him about it, he just looked at me and said “It happened while I was in the ‘nunnel’.” :) How cute. He’s such a great uncle!
