Music To My Ears
She did it. When I least expected it, while looking at her Daddy, came the most beautiful word I have ever heard, “Mmmmama.” Yes, you read right.
Prayse says “Mama”!!! She said it three times last night. I realize that I am a sappy person who is easily moved to tears, but this is a very legit reason. My baby said “MAMA”! I just can’t get over it, I can’t believe hearing one single word would make me so happy. Life is good, but it is those moments where life is more than good, life is perfect.
Speaking of music to my ears, I know spring is coming. This morning it was 6:45 and I heard the birds singing outside. It was still dark out, but they were singing. I love listening to that sound in the mornings, to me it is the ultimate symbol of spring and the end of winter. We may have some more cold days, but it doesn’t matter because SPRING is coming soon!! I am so ready to be done with Prayse’s first winter, it has been a long one.
I’ll leave you with a random recipe because I haven’t shared a lot lately but I’ve been finding a few good ones (with the exception of the ham and hashbrowns that were in the crockpot… Raymonn tried to help but turned the crockpot on HIGH for 9 hours instead of LOW for 7 hours. It turns out that makes a difference
). So here is tonight’s success:
Potato Chip Chicken
- Four Chicken Breasts
- Four cups Sour Creme and Onion Potatoe Chips (smashed = 1 Cup)
- 1 Tablespoon Parsley Flakes
- 1 Egg
- 2 teaspoons Worcestershire sauce
- 2 Tablespoons Olive Oil
In a shallow bowl mix the smashed potato chips (I used Pringles) with Parsley flakes. In a separate shallow bowl mix the egg with Worcestershire sauce. Dip the chicken breast in the Egg mixture, followed by the potato chips. Put in a skillet and brown for 10-12 minutes per side until no longer pink in the middle.
It is super easy and super yummy. Enjoy!
