Recipes 9.20.07
OK. I’m trying to be true to my word here. I’ve put two recipes below. I feel the need to preface: please don’t expect gourmet from me. The fact that I’m cooking is a surprise enough to Raymonn I’m sure
I like things that are simple and easy… hence the first recipe coming from Miss Betty Crocker’s Quick and Easy Cookbook. Also, I suck at side dishes so just assume that there will be a salad of some sort, some veggies, bread and butter, or cut up fruit.
Sloppy Joe Rotini
2 cups uncooked rotini pasta (6 ounces)
1 pound ground beef
2 cups frozen whole kernel corn
1/2 cup water
1 small zucchini, cut lengthwise in half, then crosswise into sections (1 cup)
1 can (15 1/2 ounces) sloppy joe sauce
1. Cook and drain pasta as directed on package.
2. While pasta is cooking, cook beef in 10-inch nonstick skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in pasta and remaining ingredients.
3. Heat to boiling; reduce heat to medium. Cover and simmer about 5 minutes, stirring occasionally, until zucchini is crisp-tender.
This was quick and easy. Prayse seemed to handle it okay so I think it’s a keeper for those days when I need to get something on the table quickly.
Glaze for Pork, Chicken, VealĀ
3 T milk-free margarine
1/2 cup chopped green onion
1 T Dijon mustard
1/2 cup maple syrup
In a small saucepan, bring all ingredients to a boil. Simmer for 15 minutes. Use to glaze grilled or broiled meat of your choice.
This is from my Dairy Free Cookbook. We’re trying it tonight but since we eat a lot of chicken I’m trying to find different ways rather than just random seasonings to eat it.

I just stumbled on our blog on a google search, but I wouldn’t be so hard on yourself… that sloppy joe rotini sounds really good! Since I have no idea where one would get sloppy joe sauce, I suppose making it myself might be a better idea though.

I wouldn’t even think of trying! I got a can of it at Wal-Mart, the Manwich (sp?) brand. I love the website you put, I’m going to bookmark it.
